I had a Welsh childminder when I was little & we would always have fun making them so this is an annual nostalgia trip for me & for the rest of a Fowler it seems to be a race to get to them first! Plain flour, sugar, baking powder & mixed spice in a bowl, all mixed together, then rub in little cubes of cold butter to make fine breadcrumbs, add an egg, a little milk & currants. Once it’s all combined you roll out like pastry, cut in rounds & cook in a frying pan/ pancake pan with butter until golden brown on each side. Once cooked I dust with caster sugar with a little mixed spice added. Just like Gwen showed me all those years ago 😋 Another of Gwen’s teatime treats was Bara brith, she shared her recipe for that with my mum & it became a staple Sunday tea time treat. I really should make some of that sometime. Anyway, enjoy your sweet treats today. We won’t get away without pancakes this evening, M’s been planning his chocolate, banana & caramel topping all weekend! You’ll know by now that I love rainbow colours so this josephjosephofficial nesting mixing bowl set it a kitchen favourite of mine.
